Suggested Serving Method:
- Defrost in the refrigerator for at least 24 hours.
- Carefully unpack and place the beef Wellington on baking paper.
- Put it at room temperature for at least 20 minutes, and preheat the oven and bakeware to 210ºC or 410ºF or the gas mark 6.
- Coat the puff pastry with beaten egg yolks, and put the beef Wellington with baking paper in a preheated bakeware to bake:
Rare 30 - 33 minutes
Medium 40 - 43 minutes
Well done 50 - 53 minutes
The above cooking time and temperature are applicable to the hot convention oven. If you are using a traditional oven, the temperature should be increased to 10-20ºC.
After baking, cool it down for 10 minutes before serving.
Note that the baking paper must be carefully torn apart before serving, and cut into 1½-2 cm thick slices.
