The fins locate above the belly of the fish which close to the chin. Muscles are full of springs, and it is rich in fat and gelatin. It is very suitable for salt grilling or boiling.
About 400 years ago, the Japanese began to breed yellowtail, which is the most fertile from November to February. Almost all of Japan has supplied.
The surrounding muscles of the fins are strong because of the fins movement. It can be salt grilling or boiling with sauce.
