Description
稱為肋脊(6-10根僅佔整頭牛的1.5%相當稀少),成為我們常見的帶骨牛小排,帶骨附近的油花非常豐富且集中,油筋跟膠質也較多,整隻牛油脂與油花分佈最為精美之部位。牛小排乾煎或炭火燒烤皆非常適合,有些在烹飪過程中,會將牛小排肉與骨頭分切開來,將牛排的部分煎到七建議將牛小排煎至5~7分熟度。
